
TRAVIS' STORY
In my pursuit of a culinary education, I spent long hours in the highest-rated restaurants, often with bad eating habits, poor sleep, and tremendous stress. Over time, I gained a lot of weight and realized that my desire to become a great chef was taking a toll on my health. I weighed 350lbs and knew I needed to make a change. I started going to the gym, running, and focusing on my mental health. After closing my station at Flemings Steakhouse, I would run nine or more miles every night. This helped me learn the value of discipline and the reward of delayed gratification. Eventually, I lost 140lbs, but it took me years to do it. I continued to educate myself in all areas of health and fitness while trying to become a great chef.

After operating restaurants for almost two decades, I realized that I wanted to create food that would improve people's quality of life instead of simply offering a rich, indulgent experience once or twice a month. I believe that emphasizing proper technique and flavor profiles is the key to making food taste good, rather than relying solely on butter and sugar. My goal is to demonstrate that all cuisines can be prepared in a healthy and delicious way.
In a world where so much is being challenged regarding food and health, my aim is to apply my knowledge gained from a lifelong passion for both the culinary and fitness worlds.
The path to a healthier and happier life does not have to be as difficult as the one I chose, and it has become my calling to assist those who struggle with their health, as I know how much of a mountain it can be to climb.
